Why are Idaho potatoes oval-shaped?

Topography? Climate? Please do not say that’s the way they are
No, all potatoes are not oval-shaped. Potatoes grown on the east coast are circular and moist. Potatoes grown in the west (Idaho potatoes) are oblong and tough, dry, and flaky
